  • 150 g fresh peas
  • 6 Sausages (I used Heck Smoky Chorizo style sausages)
  • 2.5 litres vegetable stock
  • 50 g butter
  • 1 onion (chopped finely)
  • 400 g carnaroli rice
  • 125 ml white wine
  • 2 tbsp tomato passata
  • 75 g cold butter (cut into small dice)
  • 100 g grated parmesan
  • Directions
  • 1. Blanch the peas in boiling water for about 2 minutes and drain. Smash 1/3 of them with a fork to make a coarse puree
