1 lb
sausage, cooked and crumbled 2 cups shredded cheese 8 eggs, scrambled 1½ cup salsa Instructions Cook your sausage and eggs throughly. Lay out 8 pieces of plastic wrap on the counter and place a tortilla on each one. Spread the eggs down the middle of each tortilla, dividing evenly. Add the sausage on the eggs, dividing evenly. Spread the cheese on the eggs, dividing evenly. Add the salsa on the cheese, dividing evenly, ensuing you stay on the cheese so you don't get a soggy tortilla. Wrap the tortilla, top and bottom in first, one side over the filling and roll. (see photos) Wrap each burrito in plastic wrap. Freeze or if you're eating them within a couple of days, refrigerate. Thaw in the refrigerator. To serve, unwrap the burrito, wrap in a damp paper towel and microwave about 2 minutes, turning over after 1 minute. Do NOT heat in plastic wrap. ***Tip: If you're freezing the burritos, put them in a plastic zip top bag to make sure they don't get freezer burn.*** 3.5.3208

This easy breakfast casserole is a complete meal with eggs, potatoes and sausage. And as with all shredded cheese recipes, I also recommend shredding your own from a block of cheese for this sausage egg potato casserole

As far as breakfastburritos are concerned this one has very few items in it now you can always add to this if say you want a meat element either diced honey ham or bacon would be good you may even like it with cut up pieces of breakfastsausage in it
top with tater tots, sausage, eggs, cheeses, tomatoes and cilantro. Add sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks
