Ingredients

  • 1 cup diced red potatoes, unpeeled (2-3 small)
  • 1/4 cup vegetable oil
  • 4 eggs 1 1/4 cups low-fat (2%) buttermilk
  • 1 3/4 cups all-purpose flour
  • 1/4 cup cornmeal
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/4 teaspoon salt
  • 1 teaspoon black pepper
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup sliced green onions, green and white parts (1-2 stalks)
  • 1 cup grated sharp cheddar cheese, or other cheese
