Ingredients

  • 2 cups finely shredded savoy cabbage or regular cabbage
  • 1/2 cup shredded carrot
  • 1/2 crisp red apple, chopped (I used a Gala apple)
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts (I used cashews)
  • 1/4 cup light mayonnaise
  • 1/4 cup fat-free Greek yogurt (I used Greek vanilla yogurt)
  • 1-1/2 tsp Dijon mustard
  • 1-1/2 tsp red wine vinegar
  • 1 tbsp Raspberry Enlightment or raspberry jam
  • 1/2 tsp honey
  • 1/4 tsp French Tarragon, crushed
  • 1/4 tsp freshly ground black pepper
  • 1/8 tsp salt or to taste
