  • 10 g of butter
  • 1/2 lemon
  • salt
  • black pepper
  • 20 g of shallots, very finely diced
  • 1 tbsp of oil
  • 400 g of frozen garden peas
  • 4 g of salt
  • 200 ml of milk
  • 55 g of crème fraîche
  • 110 ml of fish stock
  • 2.5 g of cumin seeds
  • 2 g of salt
  • 2.5 g of lecithin
