  • pound linguine
  • medium leeks, washed and thinly sliced (the white and light green parts only)
  • tablespoons butter
  • cup white wine
  • cup freshly grated Parmesan
  • pound sea scallops, with the muscle removed
  • tablespoon olive oil
  • Salt and fresh ground pepper
  • teaspoon lemon zest
  • tablespoon chopped flat leaf parsley
