  • 1/2 cup onion, diced
  • 6 cloves garlic, minced
  • 3 cups mushrooms, finely chopped
  • 1/4 cup diced celery
  • 2 tablespoons minced parsley
  • 1 teaspoon poultry seasoning
  • 1 1/2 cups cooked lentils or 1 (15 ounce) can lentils, no salt added or low sodium, rinsed and drained
  • 6 frozen artichoke hearts, thawed and mashed
  • 1/3 cup raw pecans, chopped finely
  • 1/4 cup rolled oats
  • 1/4 cup tomato paste (+ extra reserved for top of loaf)
  • 2 tablespoons arrowroot powder (or whole wheat flour)
  • 2 tablespoons Mato
  • Makes 4 cups
  • 2 cups fresh cranberries
  • ½ cup raisins
  • ½ cup date sugar (or other "alternative sugar like succanat, coconut sugar)
  • ½ cup maple syrup
  • 1 tablespoon ground cinnamon
  • 2 teaspoons grated fresh ginger
  • ¼ teaspoon ground cloves
  • 1 cup water
  • 1 small onion, chopped
  • 3 medium apples, cored and chopped
  • 4 stalks celery, chopped
  • 1 teaspoon grated lemon peel
