  • 3 tablespoons flour, divided
  • 2 tablespoons extra virgin olive oil
  • ½ cup sherry or other cooking wine
  • 1 cup white onion, chopped
  • ½ teaspoon black pepper
  • ½ teaspoon fine sea salt
  • ¼ teaspoon hot paprika
  • 2 cups mushrooms
  • 1½ cups beef broth
  • ⅓ cup plain Greek yogurt
  • 3 tablespoons scallions, sliced diagonally
  • 1 tablespoon butter
  • 1 cup frozen peas
  • 1 cup fresh spinach
  • 4 cups egg noodles, cooked and lightly buttered (to prevent sticking)
  • 2 tablespoons flat leaf parsley, roughly chopped
