  • 3 large ripe bananas, mashed (about 1 1/2 cups)
  • 1 teaspoon GF pure vanilla extract
  • 1/4 cup coconut oil, just warmed (applesauce or milk work, but you don't get the same texture)
  • 2 cups GF rolled oats
  • 2/3 cup almond meal- I grind mine in the coffee grinder- don't grind too long or it will become nut butter!
  • 1 cup coconut, finely shredded & unsweetened
  • 1/2 teaspoon cinnamon-opt
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup GF chocolate chips or use a GF dark chocolate bar chopped for a less sugar option
