Slow Cooked Clean Eating Chicken Noodle Soup

Ingredients

  • 2 chicken breasts (whole)
  • 2 carrots, sliced
  • 1 celery stick, sliced
  • 2 spring onions, chopped
  • 2 garlic cloves, chopped
  • 1 1/2 Litres home-made chicken or vegetable stock
  • 1 1/2 bay leaves
  • 1/4 tsp dried thyme
  • 8 peppercorns
  • Place all vegetables in the slow cooker
  • Add herbs/seasoning to the stock and pour over the vegetables
  • Place the chicken breasts in the slow cooker sitting on the vegetables, ensuring just covered with liquid.
  • Cook on low for 5 hours At the end of the cooking process, remove the chicken breasts, shred and mix back in.
  • If you have a favorite whole grain noodle/pasta, stir this in towards the end (allowing cooking time) to give the soup some more body.
