  • 2 pounds boneless, skinless chicken thighs
  • 2 cups frozen corn kernelsbell peppers for serving, diced, optionalcheese for serving, optionalgreen onions for serving, sliced, optionalavocado for serving, chopped, optionalwhite or brown rice for serving
