BlackBean and Sweet Potato Chili for a SlowCooker (Vegan or Not. There is nothing easier than a slowcooker recipe that doesn’t require anything but putting raw ingredients into the slowcooker & going away for five hours
Place chicken, beans, rice, water, salsa, bay leaf, cumin, and garlic salt in the slowcooker. I loved the Mexican rice and beans that I made a while ago and decided to try it again, but with barley instead
Add beans, corn, soup and rice to the slowcooker. Transfer to slowcooker. 1 1/2 tsp chili powder. 1 (15 oz) can blackbeans, rinsed and drained. Combine onion, garlic, tomato paste, oil, chili powder and cumin in microwave-safe bowl and microwave for about 5 minutes, stirring every minute until onions are soft. 1 1/2 tsp chili powder
Serve with sour cream and chili flakes if desired. It does add a nice hearty element to stuffed peppers and the slowcooker helped to make the process less of a hassle
Rinse the blackbeans in a colander under cool running water and pick out any stones or debris. Once the beans are very soft, use an immersion blender** to blend the soup until it is thick and creamy (leave some beans whole if desired)

Add the chipotles and kidney beans or blackbeans to the crockpot. Remove to slowcooker. Turn on high until it comes to a slow boil, it usually takes at least an hour when cold
Mix the chili powder, paprika, salt, cumin, pepper and oregano together and set aside. The beef becomes infused with the flavour of the spices and literally melts in your mouth
