Ingredients

  • Olive oil
  • Beef eye of round roast (mine was 2 1/2 pounds)
  • Black pepper
  • Kosher salt
  • 1 tablespoon chopped fresh rosemary (or 1 teaspoon dried)
  • 1 clove garlic, peeled and minced
  • 1 large onion, peeled and cut into thick slices
  • 1 cup beef broth (or 1 beef bouillon cube dissolved into 1 cup hot water)
  • 8 - 10 potatoes, peeled and large ones cut in half
  • 7 - 8 carrots, peeled and cut into large chunks
  • Additional fresh sprigs of rosemary (optional)
