  • 1/4 cup uncooked quinoa

  • 1 cup sweet potato
  • 1 cup Butternut Squash
  • 2 medium Zucchini
  • 2 Bell Peppers
  • 4 large carrots
  • 1/2 cup peeled garlic cloves
  • 2-3 teaspoons chili powder
  • 1 1/2 teaspoons ground coriander
  • 1 teaspoon dried oregano
  • 1 1/2 teaspoons
  • 3 c water
