  • 2 lbs pork tenderloin (either one 2 pound pieces or two 1 pound pieces)
  • 2 Medium sweet onions cut in quarters
  • 2 Cloves garlic, minced
  • 2 Tbsp maple syrup
  • 4 1/2 Tbsp Dijon mustard
  • 2 Tbsp honey
  • 2 1/2 Tbsp brown sugar
  • 2 Tbsp balsamic vinegar
  • 1/2 Tsp dried thyme
  • Salt and pepper, to taste
  • 1 Cup chicken or beef stock
