Ingredients

  • 4-5 lb pork butt (preferably bone-in and local, pastured pork)
  • 1 teaspoon crushed red pepper
  • ½ cup apple cider vinegar
  • ½ cup water
  • salt and pepper
  • 2 cups apple cider vinegar
  • ½ cup brown sugar
  • 2 tablespoons crushed red pepper
  • ¼ cup Worcestershire sauce
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 20 minutes until sauce is reduced and darker in color. If it’s too sour, add a little water. If it’s too sweet, add a little vinegar.
