I credit this SlowCooker Butternut Squash, Potato and Roasted PepperSoup to my daughter Emily. I used my new favorite magic wand kitchen tool to blend everything together and make a smooth soup and then seasoned with more salt, pepper and the Lodo Red Adobo to taste
We will actually be having these Mexican SlowCookerStuffedPeppers for dinner tonight. As a new mom I feel like the SlowCooker will become my best friend so I apologize in advance if you get tired of seeing slowcooker recipes from me over the next few months
Stuff the bell peppers with tomato mixture. Step 1Cut tops of bell peppers,dice them up and set aside. Step 2In a medium mixing bowl,combine diced tomatoes,garlic powder,onion powder,cayenne pepper,salt and black pepper. Step 3Pour 1 cup (250 g) of tomato mixture into bottom of slowcooker. Step 4Add cooked rice,garlic,diced onion,diced bell pepper and diced kielbasa to the remaining tomato mixture. Step 5Arrange the stuffed bell peppers on top of the tomato mixture in slowcooker. Cover slowcooker and cook on high-heat setting for 3 ½ hours

Combine tomato soup, water and seasoning from rice mix in a small bowl. Pour tomatoes and juice into slowcooker and then place filled peppers on top of tomatoes
In a slowcooker, whisk together chicken broth, canned tomatoes, diced yellow onion, chili powder, paprika, cumin, garlic powder, coriander then season with salt and pepper to taste
