  • 7-8 lb pork shoulder
  • 2 t fennel seeds
  • 1 1/2 t red pepper flakes
  • 1 t coriander seeds
  • 1 1/2 t black peppercorns
  • 1 T finely ground coffee
  • 1 1/2 t cocoa powder
  • 1 t ground cinnamon
  • 1 t ground cumin
  • 1 t dried oregano
  • 2 lb yellow onions
  • 3 T olive oil
  • 1 1/2 t kosher salt
  • 6 garlic cloves
  • 3 T minced fresh rosemary

  • 3 carrots
  • 2 ribs of celery, each cut in half crossways
