Ingredients

  • 1 large slice smoked salmon
  • 3 large potatoes, boiled and cut into chunks
  • 1 cup grape tomatoes, sliced in half
  • 1 cucumber, cut into bite sized chunks
  • 1/8 teaspoon black pepper
  • 1 Tablespoon coarse grained mustard
  • 1 tablespoon olive oil
  • 2 teaspoons apple cider vinegar
  • 1 Tablespoon fresh dill chopped
  • The lox makes all the difference in the potato salad
