Ingredients

  • 2 medium butternut squash, about 3-4 pounds, peeled seed and cut into 1-inch chunks
  • 2 tablespoons olive oil
  • salt
  • freshly ground black pepper
  • 12 cups chicken stock
  • 2 ½ cups chopped onions
  • 1 cup wild rice
  • ¾ pounds kielbasa or other smoked sausage cut into ¼ inch pieces
  • 2 cup frozen corn kernels
  • 1 ½ cups half and half
  • 1 tablespoon chopped parsley
