Ingredients

  • 4 servingsfor the Smothered Chops:
  • 4 thick cut pork chops (about 1-inch thickness), diced
  • 3 pieces thick cut hickory smoked bacon
  • 2 tablespoon light olive oil
  • 1 large sweet onion, halved and thinly sliced
  • 1/2 sweet red bell pepper, sliced into ribbons
  • 2 garlic toes, minced
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups chicken stock
  • 2 bay leaves or
  • 1/2 teaspoon ground bay leaves
  • 1 teaspoon fresh minced thyme
  • 1 tablespoon fresh chopped parsley, optional
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 small hot pepper or
  • 1/4 teaspoon red pepper flakes
  • 2 bunches fresh collards (or packaged if desired)
  • 2 cups or more chicken stock
  • 1 smoked ham or turkey meat
  • salt and pepper to taste
