Ingredients

  • 6-8 servings
  • dressing
  • 1 small clove garlic, minced
  • small piece of fresh ginger, grated (about 2 tsp)
  • 1/2 cup soy or tamari sauce
  • 1/4 cup mirin
  • 3 tbsp rice vinegar
  • 1 tbsp hot sesame oil
  • 2 tsp honey
  • salad
  • 12 oz soba noodles cooked as directed, drained and cooled
  • 3 green onions, sliced
  • 1 roasted red bell pepper, diced
  • 1/2 cucumber, diced
  • 1 medium carrot, shredded
  • 1/2 small bunch cilantro, chopped
  • 1/4 cup dry roasted peanuts, chopped or lightly toasted sesame seeds (optional)
