Ingredients

  • Serves 4-6Adapted from Green Kitchen Travels
  • 1 tbsp coconut oil
  • 2 onions
  • 2 cloves garlic
  • 10 fresh sage leaves
  • 1 large red potato
  • 2 medium/small sweet potatoes
  • 3 carrots
  • Salt and pepper to taste
  • 4 cups water
  • Juice ½ lemon
  • ½ cup dried fava beans, cooked
  • 2-3 stalks Tuscan kale, stems removed and leaves shredded
  • Sage leaves and olive oil for serving
