Ingredients

  • Southern Roast Turkey
  • 1 -14 to 18 pound turkey hen, fresh or frozen
  • Stuffing
  • 2 celery sticks, chopped
  • 2 medium onions, chopped
  • 2 carrots, chopped
  • 3 garlic toes, chopped
  • 1 tart, sweet apple like Stayman Winesap or Ginger Gold, chopped
  • 1 sectioned satsuma or tangerine, seeds removed
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • Herb Butter Rub
  • 2 sticks butter
  • 1/4 cup orange or lemon juice
  • 2 tablespoons soy sauce
  • 1 teaspoon rubbed sage
  • 2 teaspoons ground thyme
  • 1/2 teaspoon dried margoram
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt
