Mini soya chunks, rehydrated in hot water and drained: ½ cup
Coriander powder: 1 teaspoon
Garam masala: 1/4 teaspoon
Heat the oil in a pan, add onions, capsicum and saute until translucent
Add all the spice powders and Kissan Fresh Tomato Ketchup to it
Add the drained soya chunks and salt and mix well. Add a little more water if required to cook the soya through
Add the sugar and stir in the fresh coriander leaves
Switch off the flame and add lemon juice to the soya mixture
Place the paratha on a flat surface and spoon the soya mixture down the middle (about 2 tablespoons). Roll up and secure with foil on one end to ensure there is no spillage while eating.
Pack the tiffin with roasted chana and grapes.
You can substitute Paneer with Tofu or Soya Chunks. Many get confused between Kathirolls and Frankie. Though I cannot call mine KATHI as I have pan fried the cottage cheese, but if baked using the same ingredients, the name holds good

When I decided to try making a cinnamon roll cookie, I first tried adapting one of my other cookie recipes, but they spread out too much, and became more flat and crispy than I wanted, as well as tasted a little too much like Snickerdoodles
