I wanted to make something nutritious, fun, and fairly easy to make, so I decided I would make SpaghettiSquash with Homemade Meatballs…and serve it in it’s own bowl
Add the garlic and red pepper flakes ad cook until fragrant, about a minute. Season with salt and pepper to taste, mix in the cheese and parsley and enjoy
Spaghettiandmeatballs is a classic recipe but one I don't find myself craving very often. So when I came across a spaghettiand meatball recipe on her site that was an incarnation of a Barefoot Contessa (also one of my faves) recipe, I looked no further
Serve the meatballs over spaghetti, and sprinkle with Parmesan cheese and fresh basil. Combine the first 6 ingredients and 2 tablespoons of pasta sauce in a medium bowl. Shape the meat mixture into 25 (1-inch) meatballs. Add the meatballs, and cook 6 minutes, browning on all sides. Cover, reduce heat, and simmer 10 minutes or until the meatballs are done, stirring occasionally. 5 cups hot cooked spaghetti (about 8 ounces uncooked pasta)
Ladle the remaining tomato sauce over the spaghettiandmeatballs. Cut out spaghetti using a pasta cutter and place the fresh pasta on a tray lined with parchment
Spaghettisquash is one of my favorites to work with because of its pasta-like consistency, so I seasoned it with brown butter, sautéed garlic, and crispy sage leaves to bring out its natural flavor
Drain the spaghetti, then return it to the pan. Remove the meatballs from the pan and set them aside. In a medium bowl, mix the beef with the garlic powder, parsley and Parmesan to combine
While squash is roasting, prepare and bake meatballs. When squash is cool enough to handle, scrape flesh every which way with a fork to loosen and fluff strands
