We’ve got fresh early fall zucchini with the warmth of a soup and the heartiness of chicken sausage. I don’t like keeping zucchini noodle based soups in the refrigerator for too long, so I wouldn’t recommend reheating this one – the water in the zucchinis tend to dilute the broth and it’s not as tasty

Pare several slices of skin lengthwise from zucchini, alternating with strips of remaining skin. Cut zucchini into long strips to resemble lasagna noodles
Add cream and simmer until bubbly and starting to thicken. Add onion and cook until the edges start to brown approximately 8 minutes. Add garlic and cook for additional 1 minute. Add zucchiniand yellow squash and cook an additional 5-6 minutes. Sprinkle with smoked gouda and bake in the oven for 15-20 minutes or until cheese is golden brown
