Ingredients

  • 6 servings)
  • 1 Tbsp. of olive oil
  • 1 medium onion, chopped (about 1 1/2 cups)
  • 4 cloves garlic, minced (about 4 tsp.)
  • 3 Tbsp. of tomato paste
  • 1 can (28 oz.) of crushed fire-roasted tomatoes, with their juices
  • 1 tsp of finely minced canned chipotle chile in adobo sauce, or more to taste
  • 2 tsp of dried oregano
  • 1 sprig fresh rosemary
  • Salt and freshly ground black pepper to taste
  • 1/4 cup of torn fresh basil
  • Cooking spray
  • 1 lb of lean ground turkey meat (See note)
  • 1 slice whole-wheat bread, crusts removed and pulsed into crumbs in a food processor
  • 1/4 cup of freshly grated Parmesan
  • 1/2 cup of finely grated carrot
  • 1/2 cup of finely chopped onion
  • 2 large garlic cloves, minced (about 2 tsp.)
  • 2 Tbsp. of minced fresh flat-leaf parsley
  • 2 tsp of minced fresh thyme
  • 1 large egg, lightly beaten
  • 1/2 tsp of salt
  • Freshly ground black pepper
  • 1 box (16 oz.) of whole-wheat spaghetti
  • 1/3 cup of freshly grated Parmesan cheese
  • Minced fresh flat-leaf parsley for garnish
