Ingredients

  • 140 g butter, at room temperature
  • 1 cup / 200g caster sugar
  • 2 large eggs, at room temperature
  • 1 tsp pure vanilla essence
  • 3/4 cup coconut cream (from packet is fine)/ greek yoghurt
  • 2 cups/ 250g plain flour
  • 1 tsp ground ginger
  • 1 tsp ground cardamom
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 200 g rhubarb, thinly sliced (any fruit can be used)
  • 1/4 tsp salt
  • 1/2 cup / 50-55g raw sugar
  • 1/2 cup / 45g walnuts, cut into quarters
  • 4 tbsp plain flour
  • 1/8 tsp ground cardamom
  • 1/8 tsp ground ginger
  • 3 tbsp long coconut threads
  • 60 g cold butter, cubed
