Ingredients

  • 1 tablespoon of butter or canola oil
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon of freshly chopped sage
  • pinch of ground nutmeg
  • 1/2 teaspoon of ground cumin
  • 2 and 1/2 cups of low-sodium vegetable stock
  • 1 cup of canned cannelli beans (white kidney beans); well rinsed
  • 1-15 ounce can of pumpkin purée (not pumpkin pie filling)
  • 1 cup of 2% milk or almond milk
  • 2 tablespoons of apple cider vinegar
  • salt and pepper to taste
  • crème fraîche (optional)
  • 4 pieces of crusty sourdough bread, cut into 1 inch cubes
  • 1 large clove of garlic, minced
  • 1 teaspoon of fresh chopped rosemary
  • 1 tablespoon of canola oil or butter
  • sea salt and pepper to taste
