  • 1 1/2 cups basmati rice
  • 4 cups water
  • 1 tbsp olive oil
  • 2 tsp cumin seeds
  • 1 1/2 tsp curry powder
  • 1 tin chickpeas, drained and rinsed
  • 1/2 cup sunflower oil
  • 1 onion, thinly sliced into rings
  • 1 1/2 tsp all purpose flour or gluten-free flour
  • 2/3 cup dried currants
  • 2-3 tbsp fresh flat-leaf parsley, chopped
  • 1 tbsp fresh cilanto, chopped
  • salt and pepper
