  • 1 ½ cup all-purpose flour
  • ½ cup yellow cornmeal
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ to 1 teaspoon cayenne
  • ¼ teaspoon dried oregano leaves
  • 1 ¼ cups shredded sharp cheddar cheese
  • ½ cup fresh corn kernels*
  • 2 serrano chiles, one finely chopped, one sliced into seedless rings
  • ¼ cup melted butter
  • 2 large eggs
  • ¾ cup milk
