Ingredients

  • 1 3/4 cups basmati rice
  • 4 teaspoon peanut oil
  • 1 small onion, finely diced
  • 1 tablespoon minced fresh ginger
  • 1 garlic clove, minced
  • 1/4 teaspoon turmeric
  • salt to taste
  • ½ teaspoon lime zest
  • 1 package extra firm tofu
  • 1/2 tablespoon ground coriander
  • 1/2 tablespoon ground cumin
  • 1/4 teaspoon paprika
  • 1/8 teaspoon cayenne (more if you want it on the hot side)
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon peanut oil
  • 2 scallions, including half of the greens, coarsely chopped
  • 1 tablespoon fresh lime juice
  • 1/4 cup cilantro, chopped
