  • 3 egg whites (or 2 whole eggs) cracked in a separate bowl
  • 1/3 red pepper, diced
  • 1/4 onion, diced
  • 1 cup broccoli, broken into florets
  • 1 cup spinach, chopped
  • 1/4 tsp chili powder
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • salt and pepper
  • 6 cherry tomatoes, sliced (garnish)
