  • 2 ham hocks went into the soup and it began simmering away until…
  • 1 cup yellow onion, finely chopped 3 cloves garlic, minced 1/8 cup olive oil 2 springs fresh oregano, removed from stems salt and pepper, to taste 3-4 carrots, diced 3 small red potatoes, diced 1 pound dried split green peas 8 cups low-sodium chicken broth (we used 6 cups chicken broth, 1 cup veggie broth & 2 cups water)
  • 1 ham bone
  • 4- quart dutch oven, heat olive oil and sauté the onions and garlic
