  • 1 tbsp olive oil 1 cup finely diced onion (about 1 medium onion) 2 cloves garlic, peeled and smashed 1 lb dried green peas 2 quarts veggie broth or stock 1 tsp liquid smoke, optional 1/2 tsp kosher salt 1/4 tsp ground, black pepper 1 large potato, peeled and cut into 1/2 inch dice 2 cups peeled, diced carrots salt and pepper to taste Instructions 1. Warm the oil, in a large soup pot, over medium heat. Add the onion to the warm oil. Saute until the onion is translucent. 2. Add garlic, peas, broth, liquid smoke, salt and pepper. 3. Simmer until the peas are softened, which will be 45-60 minutes. You may need to add more water to keep the peas covered as they cook. 4. Add the potatoes and carrots. Simmer another 35-40 minutes, until the potatoes and carrots are tender. http://www.veganmotherhubbard.net/
