Ingredients

  • 1/2 Cup of Pearl Barley
  • 1 1/2 Cups of Water
  • 10 Spears of Asparagus, rough ends trimmed and discarded
  • 6-8 Fresh Pea Pods, about a 1/4 cup of peas
  • 1 Lemon (juice of), about 2 tablespoons 1/2 Tbsp Extra Virgin Olive Oil
  • 1/2 Shallot 1 Clove of Garlic (pressed/crushed)
  • 2 Tbps Non Dairy Cream (I used an oat cream, but you could also use a soy cream or other non dairy cream of your choice to keep this vegan)
  • Salt and Pepper to taste
