Ingredients

  • 4 cups sliced fresh strawberries (21 oz.)
  • 16 cups frisée and/or mixed spring greens
  • 12½ cups cooked and cooled wheat berries (1 cup dry)
  • 11 medium fennel bulb, trimmed, quartered, cored, and thinly sliced (1 cup)
  • 12 cups sugar snap peas, halved diagonally
  • 1½ of a small red onion, thinly sliced (⅓ cup)
  • 13 tablespoons chopped fresh mint
  • 1¼ cup white wine vinegar
  • 12 tablespoons Dijon-style mustard
  • 12 teaspoons pure maple syrup
  • 1 Sea salt, to taste
  • 1 Freshly ground black pepper, to taste
