Beginning with a short side, roll up lamb, enclosing arugula (the rolled roast will appear messy and ungainly, but once it's roasted, it will look delicious)
Garnish with sliced spring onions and serve with mint sauce or jelly. Start by browning off the lamb shanks in the casserole pot in one tablespoon of olive oil – just enough to seal the meat
This is the part of spring where the weather gets a little schizophrenic. I want buttery-soft roasted potatoes, herb-rubbed pork roasts studded with garlic cloves, crispy-skinned roast chicken stuffed with whole lemons, and thick slices of rare roast beef crusted with mustard
Lay half the sprigs of rosemary and half the garlic cloves on the bottom of a high-sided roasting pan, rub the lamb all over with olive oil and season with salt and pepper
Lamb might not be an obvious choice for kids but there are lots of great things about it. Rosemary and garlic are natural partners for lamb but with a leg of lamb, it's often inserted and I find the garlic is still undercooked and indigestible
This roast uses a lesser known cut of lamb, but one that is full of flavour. But before I roam to satisfy my increasing desire, here is one of my favourite lamb recipes for you all
Remove the pan from the oven, keeping the door slightly ajar and place the roasting pan on the table or countertop (using ovenproof place mats) and then brush a bit more oil onto the lamb
