Ingredients

  • For Marinade and Steaks
  • 1 bottle dark beer, such as Negra Modelo or Dos Equis
  • 1 jalapeno chile, minced
  • 6 scallions, sliced
  • 2 garlic cloves, minced
  • 2 tablespoons soy sauce
  • 1/4 cup chopped fresh cilantro
  • Pinch of ground cumin
  • Pinch of dried oregano
  • 4 top sirloin steaks, about 8 ounces each, sliced into thin strips about 3 inches long and 1/2 inch wide
  • 3 cups cooked black beans
  •  
  • For Rice
  • 1/2 teaspoon dried ground oregano
  • 1/2 teaspoon ground cumin
  • 3 tablespoons butter
  • 2 garlic cloves, minced
  • 1/2 onions, minced
  • 1 1/2 cup white rice, rinsed in cold water and drained
  • 1 1/2 tablespoon pure red chile powder
  • 3/4   teaspoon salt
  •  
  • For Fajitas
  • 2 tablespoons peanut oil
  • 1 red onion, sliced
  • 1 poblano chile or green bell pepper, seeded and julienned
  • 1 red bell pepper, seeded and julienned
  • Juice of 1 orange
  • Juice of 1 lime
  • 8 flour tortillas
  •  
  • For Garnish
  • Chopped fresh cilantro leaves
  • 1/4 cup (4 tablespoons) sour cream
  • 1 avocado, pitted, quartered, and sliced
  • 1 lime, cut into wedges
