Ingredients

  • For the Dumplings
  • 1/2 pound center-cut cod fillet
  • 1 large egg
  • 1/4 pound medium raw shrimp, peeled and deveined
  • 1 tablespoon minced peeled fresh ginger
  • 1/3 cup minced water chestnuts
  • 2 scallions, white and green parts, finely minced
  • 1/4 teaspoon ground coriander
  • 1 teaspoon soy sauce
  • 1/4 teaspoon freshly ground black pepper
  • 35 wonton wrappers (about 3 inches in diameter)
  • 3 to 4 large Chinese cabbage or lettuce leaves

  • For the Sauce
  • 1/3 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon dry sherry
  • 2 tablespoons minced fresh coriander leaves
  • 1/8 teaspoon ground coriander
  • 1/4 teaspoon crushed red pepper flakes (optional)
