Ingredients

  • For the brioche dough
  • 2¼ cups unbleached all-purpose flour
  • 2¼ cups bread flour
  • 1½ packages (3¼ teaspoons) active dry yeast
  • ½ cup plus 1 tablespoon sugar
  • 1 tablespoon kosher salt
  • ½ cup cold water
  • 5 eggs
  • 1 cup plus 6 tablespoons (2¾ sticks) unsalted butter (I used salted), cut into 10 or 12 pieces, room temperature

  • For the sticky-stuff
  • ¾ cup (1½ sticks) unsalted butter
  • 1½ cups packed brown sugar
  • ⅓ cup honey
  • ⅓ cup heavy cream
  • ⅓ cup water
  • ¼ teaspoon kosher salt

  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • 1 cup pecan pieces, toasted (optional) - split
  • 1 cup raisins (optional) - split
