Ingredients

  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 8 ounces (1/4″ wide) rice noodles
  • 3 tablespoons vegetable oil
  • 1 pound beef flap meat, cut into 2-inch wide strips with the grain and then cut against the grain into 1/8-inch thick slices
  • 2 bell peppers (a mix of red, orange or yellow)
  • 3 shallots, thinly sliced
  • 1 tablespoon ginger, minced
