Ingredients

  • serves 2 to 4
  • 2 cups dry breadcrumbs
  • 3/4 cup milk
  • 2 eggs 1 cup spinach (thawed and squeeze out water), finely chopped
  • 1/2 cup flour (may need to add a bit more if too wet)
  • sprinkle of freshly grated nutmeg
  • 1 cup finely grated Parmesan cheese
  • chicken broth
