Ingredients

  • 1 1/2 cups mashed ripe bananas (about 3 small bananas)
  • 1/2 cup light brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 3/4 cup whole-wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup chopped, toasted pecans
  • 2 pounds sliced strawberries (hulled and wiped clean)
  • 1 pound chopped rhubarb
  • juice and zest of 2 lemons 2 teaspoons cinnamon
  • 6 tablespoons classic pectin
  • 6 cups granulated sugar
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla
