Ingredients

  • 1 pound ground turkey or chicken
  • 4 bell peppers - medium to large.
  • 1 small can of red enchilada sauce - about 10 ounces 1/2 package of Mexican chorizo - about 5 ounces 1 cup of cooked rice - white or brown.
  • 1 package of Queso Fresco (4 oz.) or your favorite cheese - optional.
  • 1/2 onion - chopped
  • 1 large egg (or 2 medium).
  • 1 teaspoon garlic - chopped, from jar or fresh.
  • 1/2 teaspoon of ground cumin - optional.
  • Salt and pepper to taste.
  • * I had a few leftover mushrooms that I cut up and added - optional.
