  • 1           lb. shrimp </d>
  • 12           cups basmati rice, rinsed </d>
  • 13           cups hot water, for soaking </d>
  • 12           large yellow onions, sliced </d>
  • 18           oz (1 cup) ghee (clarified butter) </d>
  • 1 ⅓         cup cashews </d>
  • 1½         cup golden raisins </d>
  • 12           stick cinnamon </d>
  • 18           whole cloves </d>
  • 11           tsp ground cumin </d>
  • 11           tsp cumin seeds </d>
  • 11           tsp fennel seed </d>
  • 15           whole cardamom pods </d>
  • 12           medium yellow onion, diced </d>
  • 12           jalapeño chiles, diced </d>
  • 14           Roma tomatoes, diced </d>
  • 13           tbsp tomato puree </d>
  • 11           tbsp fresh ginger, minced </d>
  • 11           tbsp minced garlic </d>
  • 1 Juice of 1 lime </d>
  • 1½         cup plain yogurt </d>
  • 1 Salt, to taste </d>
  • 11½       cups boiling water </d>
  • 1 Raita </d>
  • 12           medium cucumbers, finely diced </d>
  • 1½         green apple, finely diced </d>
  • 1½         red apple, finely diced </d>
  • 14           pitted dates, finely diced </d>
  • 1¼           cup finely chopped onion </d>
  • 12           cups plain yogurt </d>
  • 1 Juice of 1/2 lime </d>
  • 14           tsp sugar </d>
