Ingredients

  • 1¼ ounce envelope (about 2¼ teaspoon) active dry yeast
  • 3 tablespoons warm water (about 115 degrees F)
  • 3½ to 4 cups all-purpose flour, divided, plus more for rolling
  • 1 tablespoon plus ¼ cup granulated sugar
  • 1 large egg
  • 2 large egg yolks
  • ½ cup warm whole milk (about 115 degrees F)
  • 2 tablespoons apple cider
  • 1 teaspoon vanilla extract
  • 1 teaspoon kosher salt
  • 6 tablespoons (3/4 stick) unsalted butter, room temperature, cut into pieces
  • 7-8 cups vegetable oil
  • 2 cups granulated sugar
  • 1½ cups jam of your choice (I used two different kinds - berry and fig)
