  • 2 cups short-grain sticky or glutinous rice
  • 2 tbsps lye water (potassium carbonate and sodium bicarbonate solution)
  • 15 minutes - the rice will turn light yellow. Rinse, drain, and soak again in fresh water.
  • 4 tablespoons of rice in the middle of the smaller leaf, flatten, and wrap by folding the leaf away from you and rolling, making sure the rice is snug. Fold the two long ends over and set down, seam side down. Repeat until all the rice is used up. Using the banana leaf strips (or kitchen twine), stack the suman in pairs, with the folded ends facing in toward each other, and tie the suman together.

  • 1 cup brown sugar, packed
  • Roasted Desiccated Coconut
  • 1 cup sweetened desiccated coconut
