Summer Salad with Herbed Ricotta and Balsamic Vinaigrette – a simple salad with gorgeous heirloom tomatoes, cucumbers and radishes and drizzled with a simple balsamic vinaigrette and a dollop of herbed ricotta takes this salad over the top!
Summer is here. You can use it on homemade pizza, smear it on crostini and top with sliced dates and honey, add a spoonful or two over wilted beet greens, or slather it on hunks of bread with sliced, salted tomatoes and a few sprigs of thyme or tarragon
For dinner last night, we made homemade ricotta, then mixed it with fresh herbs to make a creamy spread for thick slices of grilled bread, ribbony asparagus saladwith lemon and parmesan (which I can't take credit for--this pretty salad was inspired by Smitten Kitchen), and spicy skewered shrimp
Toss the salad ingredients with the dressing and let sit for a few minutes before serving. I prefer to make non lettuce based salads for this reason and stick to cucumber and tomato salads, or my favorite, Caprese Salad
This can easily be an entree salad for a satisfying, healthy summer dinner. My craving was satisfied, but haven’t stopped thinking about fresh and healthy recipes with all the amazing produce summer will bring
